Classic caviar with a creamy-nutty aftertaste and almond notes. The flavor is very delicate, slightly salty, and refined; it needs to be savored, lacking the pronounced taste found in red caviar. The eggs are 1 to 1.5 mm in size. In nature, female Russian sturgeons mature at the age of 12–16 years. The tender, moderately oily, dark golden caviar literally melts in the mouth, delighting with its long-lasting aftertaste.
Black caviar does not pair well with sandwiches and butter. While large red caviar tastes well in such a presentation, the small grains of black caviar get overwhelmed by creamy butter and bread.
Black caviar can be used to prepare a variety of appetizers or added to different dishes: soft-boiled eggs, pancakes, baked potatoes with cream, spaghetti with caviar and sauce, sushi, Olivier salad with shrimp, and much more.
